Our Early Harvest Domat olive oils, which we have obtained from Domat-type olives unique to the Akhisar region.

Cold Pressed: < 24°C

At Savory, we take great care in the production of our olive oil. Our olives are carefully selected and squeezed in conditions not exceeding 24 C degrees. We ensure that our olives enter production within 4 hours of harvesting and are stored in special steel chrome tanks to preserve their aroma and beneficial components.


High Polyphenol
As they are pressed in a cold and completely closed system, olives preserve the Polyphenols they contain and thus increase the health of our oils as much as possible.


Acidity: 0,45% - 0,55%

Peroxide Number: 12.89


Aroma: It is an olive oil that evokes the smells of olive leaves and tomato peel.

Filtered and Unfiltered Options

The products produced in our factory can be offered with or without a filter, according to the consumer's request. Our standard products are offered in a filtered form unless otherwise stated.

Production Method of Extra Virgin Olive Oil

One of the most crucial aspects of excellence in production is to process olives on the day of their harvest. We make sure to transport our olives to the factory as soon as they are picked.

 

First, they are stored in a cooling room to prevent heat in the olives. After this, the production starts. Our German-made GEA Westphalia pressing line is a one-of-a-kind pressing unit. First, the olives are crushed, then the olive dough is kneaded in mixing tanks.

 

After some time in the mixing tanks, now the mellowed dough is run through a decanter. In the decanter, solids, and liquids (Water and Oil) are separated.

 

Finally, liquids are separated in a separator, resulting in a golden green oil. During these phases, our machinery is cooled with running water to keep the temperature of the produce under 24° Centigrades. Thus we achieve true Cold-Press in all our products. 

After storing the Olive Oil in chrome tanks for some time to ensure the settling of solids, the oil is filtered to get rid of the remaining solid particles. All our products are stored in chrome tanks and are topped with Nitrogen gas to prevent any contact with oxygen. Our storage facility is climate controlled to ensure the highest quality conditions for our products. The filling is done hand free in a rotary machine that is capable of filling 800-1000 units per hour.
